If you are a parent, you know that the minute your child gets sick, all your best laid plans go out the window…including meal plans. This is basically what happened to me this week. On top of that, I knew we were in for it when the week end started with me having to go to the chiropractor for a much needed adjustment. So I gave myself a bit of a break this week so I could take care of my daughter, who needed her mama, all the while trying to take care of my needs too. Sound familiar?
Saturday: Spaghetti Bolognese take 2. A little bit of much needed comfort food for everyone, even the grown ups.
Sunday: Pizza night at the house. I got so excited that I ate my Margherita pizza before I could take a picture! You can tell right there that the kitchen has been pretty much deserted this past week end.
Monday: Fresh week – fresh start – healthy child – neck back to normal. Cumin infused vegetables and chickpeas over quinoa. And a desperate attempt to deal with carb overload from all the pasta and pizza this weekend.
Tuesday: Maple salmon with roasted brussels sprouts, red onions and steamed potatoes. Wild Salmon is pretty much on our menu every week, I just try to pair it with different vegetables and sides. I though this meal was simple and satisfying at the same time. And roasted vegetables are always so good…
Wednesday: Leftover from the cumin vegetable stew cooked the other day. When I eat leftovers, I like to fresh it up a little bit by adding fresh herbs. Cilantro was the obvious choice for this dish.
Thursday: Pesto orzo and grilled garlic and herb chicken. The combination of the orzo and the chicken had good picnic potential.
Friday: Red lentil soup with lemon. Ah, there’s nothing like a hot lentil soup in the peak of summer. Really? In my defense, I was busy preparing 48 birthday treats (48!) for my daughter’s class so there’s nothing wrong with this found-it-in the pantry kind of meal. Plus it’s really tasty!
