Is it me or doesn’t it feel like the summer is slipping away really fast? Anyway, this is what happened in our kitchen and on our dinner table this week.
Saturday: Sushi bowl
After few days of indulgence that culminated in our eating out at North Italia, I felt I needed a break, hence, the sushi bowl, which is the epitome of clean food. Ours consisted of brown sushi rice, nori, teriyaki tofu (ok, could be cleaner), avocado and lemony kale.
I made baked potatoes with broccoli and cottage cheese for our daughter.
Sunday: Relying on this trusted tomato soup recipe. I served it with cheese quesadillas and I even had one.
Monday: Bis repetita
Tuesday: Salmon night. With mashed potatoes and broccoli for the little kid. Brown rice and garlicky, gingery Bok Shoy for the big kids.
Wednesday: Pad Thai + Mango Coconut popsicles
Pad Thai was my first introduction to Thai food. A beginner’s dream dish. Not too sophisticated but oh so good. I have fond memories of this old Thai woman that had a Pad Thai stand at my local farmer’s market in Brussels. It was so nice, after work, to stop by the market to buy some fresh fruits and vegetables. And, of course, I would inevitably get a bowl of noodles that I would eat at home with a fresh beer. Alas, the one I tried to recreate with this recipe was far from being as authentic and tasty as the one from the old Thai woman. I will keep trying though…
Thursday: Crab cake, green beans and potatoes for my daughter and avocado toasts with spinach and soft boiled eggs for us
Friday: Spaghetti Bolognese. Seems like every Friday is a cheat day…oh well.
