I typically plan my weeks at the beginning of the week, before I go for my main trip to the grocery store. This week I planned and consequently bought more than what we could eat. The food hasn’t spoiled yet but it got me thinking about meal planning in general. I will write on this topic very soon so stay tuned! Meanwhile, here is how our week went.
Saturday: Unfortunately, there wasn’t much Halloween fun for us this year as our daughter picked up yet another bug…so we sat home instead. Thank god, I had a nice cup of coffee and a chocolate croissant to make up for it.
Sunday: I typically don’t take the time to do a Chicken Soup from scratch but this time, I did as I spent much time at home over the week end…Chicken Noodle Soup is such a classic that you would think that it is a no brainer. Well, not so fast. I’m still looking for the ultimate Chicken Noodle Soup recipe but haven’t really found the one yet. My recurrent issue is that my broth is greasy. I know you are supposed to skim the surface a couple of times while it cooks but for some reason, there isn’t much to skim on mine and yet, it feels a little too oily. I used paper towel to absorb as much oil as I could and it did kind of work. Maybe next time, I’ll skin the chicken?
Monday: We had more soup as I made a big batch.
Tuesday: We started our day with a very nice hike in Malibu. Fall in Los Angeles is ideal for hiking. The air was crisp and yet sunny. It was such a perfect morning.
We came home hungry and I made a Nicoise Salad, with tuna, potatoes, green beens and tomatoes. I added a sunny side egg on my plate to make up for the protein required by the extra effort.
Later that day, I made a Tilapia with Tomatoes, Black Olives and Corn, a recipe that I found in the magazine Allrecipes. I never subscribed to this magazine by the way but it mysterioulsy appears in my mailbox. I’ll take it as I’m always happy to get newer and fresher cooking ideas…
Wednesday: I had so much leftover from last night’s dish, it was insane. So Tilapia again. I served it with Brown Rice and sautéed Spinach.
Thursday: Really digging the coffee at Two Guns Espresso these days…I keep thinking I should ditch the coffee but that day hasn’t arrived yet…
The theme for our dinner revolved around Puff Pastry…
I used the leftover chicken from our soup to make a Vegetable Chicken Pot Pie. I Have done this recipe a few times now and it’s always a winner. My husband had seconds and thirds…then felt angry at himself for eating so much. Seriously that’s how good it is.
I used one sheet of puff pastry for our pot pie and the other one to make Apple Tarts. This recipe too is ridiculously easy and delicious. Totally recommend it. I always use a little bit less sugar than said in the recipe and yet, it is perfectly sweet without being too sweet.
Friday: Our weekly meals wouldn’t be complete without it so here we are: Spaghetti and Turkey Meatballs in Marinara Sauce.
