And it’s Monday. I don’t quite believe how fast these weeks go by. This past weekend was fun: we went on a Halloween Hunt and took in a show at our local library. I was planning some baking but I couldn’t find enough time to get it done. The creepy cupcakes I had in mind will be perfect as Halloween is right around the corner. Have a fun week everyone!
Saturday: Zen Bakery’s Cinnamon Raisin Rolls and Kusmi Tea
I was excited to see that my local grocery store carries some items from this bakery, as I don’t go to the Westside of L.A. that often. The rolls were definitely chewy and sweet. I had tea for a change: the iconic Anastasia from Kusmi Tea, a blend of black teas, bergamot, lemon and orange blossom. So good.
For dinner, I made a Marinara sauce with Spicy Italian Sausage and Mushrooms and served it with…Spaghetti. What else…
Sunday: We had a fun day at a local Pumpkin Patch. My daughter rode a pony, bounced, fed some animals, got a pink skeleton painted on her face and of course…picked a pumpkin for our house. Later that day, I made a Tofu Scramble that we ate with some Sweet Potato Fries. It could be a breakfast dish really, a sort of vegetarian version of a classic scrambled eggs. I would like to use Tofu more often to keep up with our vegetarian diet, but I still haven’t found a very satisfying way to eat it. Even when it’s flavored with spices, it seems kind of bland for my taste. Any ideas?
Monday: I love eating my meals in bowls. Actually, we rarely use plates anymore…I like the idea of throwing a bunch of flavors and textures in a bowl and calling it a meal… it is so satisfying! Tonight I made a Wasabi Rice Bowl with Seared Salmon (Brown Rice, Watercress, Green Onions, Radishes, Cucumbers and Avocado and Wasabi dressing to top off all this goodness)
Tuesday: Lentils are so comforting at this time of the year so I made a big batch of soup packed with cumin, ginger, swiss chard and red lentils. Please meet the Autumn Lentil soup with Wilted Greens. The recipe I followed calls for 2 cups of lentils. I personally thought it was too chunky and adjusted broth accordingly. A matter of how you like your soup really.
Wednesday: My husband joked that he had been eating this soup forever, which wasn’t far from the truth. I did make some Quinoa-Veggie Muffins though hoping they would be a winner in my daughter’s book. Nope. She was actually pretty disappointed that these were savory and not sweet…
Thursday: Tin Roof Bistro’s Brussel Sprouts, Turkey Meatballs and Farro Linguine
I have actually never been to Tin Roof Bistro but everybody seems to love their Brussel Sprouts that they serve on some grilled Ciabatta. Farro Linguine (really like these), Turkey Meatballs with Marinara Sauce on the side. Unless the Brussel Sprouts are on the side. Whatever.
Friday: I am a big Curry fan. This one is a Thai Red Curry with Vegetables and I added shrimps to the pot to make it a complete meal. It was delicious served with brown rice.
