This week really flew by…the weather has finally cooled off here and it has been nice to wear light sweaters again. Perfect for going to a pumpkin patch this week end! Meal wise, here’s what’s been cooking this week.
Saturday: I started the day by preparing what has to be, my daughter’s favorite pancake: the two-ingredient Banana Egg Pancake. Perfect fuel before her ballet class!
It was so hot that day that we spent the afternoon doing Halloween crafts at home. Meet Mrs. and Mr. Bones!
For dinner, I made Eggplant Parmigiana. Find it in the Recipe section!
Sunday: After a fun pool playdate, I made a Pancetta Spinach Quiche. I used this dough and wished I hadn’t, which reminds me that it’s always better and less complicated to make your own dough.
Monday: We went out for a Pizza-playdate that night but I also made a quick Tomato soup.
Tuesday: I haven’t done much cooking today. Leftover Tomato Soup and a Quinoa Arugula Salad with Pistachios, Dates and Tangerines
Wednesday: I found some beautiful Halibut fillets at my grocery store and decided to make a Fish Curry. I looked for a few recipes for inspiration and most of them included Madras Curry Paste, which I didn’t have. Instead of going to the store, I made my own. Luckily, I had all the spices required and it probably tasted better too! The whole dish was delicious and so aromatic that I will share it soon on the blog!
Thursday: A favorite recipe: Roasted Cauliflower and Lentil Tacos with Creamy Chipotle Sauce. I topped the tacos with a fresh Pineapple Salsa. Yum!
Friday: Today we tried Shophouse SouthEast Asian Kitchen, basically the Asian version of Chipotle: fast, cheap, gigantic portions…and spicy! I had the Shophouse bowl and I’m ready to skip dinner…Probably won’t have too many of those again.
I made a Spinach & Cheese Omelette for my daughter and because it’s Friday, she got Fries (French of course) too!
