How was your week? It is fun to start seeing Halloween decorations popping out in our neighborhood. This probably is my daughter’s favorite celebration (a weird mix of fascination and fear about it) and she already had her costume picked by late August! Here’s what’s been cooking this week.
Saturday: For lunch, I made the Zucchini Fritters that I originally planned for the night before. I gulped them down with a side of creamy Avocado.
For diner, I made a Onion Pizza with Ricotta and Chard using a multigrain Pizza dough.
Sunday: Blueberry Pancakes for breakfast. Pretty much the same ones as last week but this time, I used a mix of whole wheat flour and all purpose flour.
For diner, I made a Chicken and Brown Wild Rice Soup and served it with Cheese Quesadillas.
Monday: For lunch, I had originally picked Sushi from my grocery store but when I was in line waiting to pay, I took a look and saw so little fish that I left without them. Is it me or does it seem that sushi is less and less generous with fish? Anyway, coming home, I had to improvise lunch and I made a few sandwich variations using the leftover Hummus that I had.
For diner, I made a Spicy Kale and Coconut Stir Fry.
Tuesday: Crispy Smashed Potatoes with Avocado Garlic Aioli. These potatoes are really delicious. A little bit of double cooking is involved as potatoes are first boiled, then baked but it’s totally worth it!
Wednesday: Maple Roasted Salmon, Rainbow Chard and Potatoes. Ok, I have gotten to the point where I am getting really tired of this salmon recipe so I’m going to try to change things up a bit…
Thursday: I was off duty. My daughter’s school had the good idea of organizing a Pizza in the Park event. Happy kid, happy mom! I still made a soup in the afternoon though: Leek Potato Soup
Friday: Seems like every Friday, I struggle to get dinner ready on time. I was planning on making Eggplant Parmigiana but relied on quick Spaghetti with Marinara Sauce instead.
