And here comes October…I’m so excited to move into Fall. It has been hot here for so long now that it’s hard to believe that the weather is going to cool off but it will eventually. Meal wise this week, I had a ton of leftovers so I feel like I didn’t cook as much.
Saturday: Summer is far from being over here in Los Angeles, which means it is still nice to have salads. I made a Greek Farro Salad, which brings all the traditional greek flavors: Roasted Red Pepper, Cucumber, Kalamata Olives and Feta Cheese. The Farro added a nice texture and made it hearty enough for dinner.
Sunday: To me Sunday means…Pancakes! There is something so satisfying and comforting to start your day with coffee and pancakes…I could have it every day of the week. Today, I made Blueberry Pancakes.
Monday: Lentil and Couscous Stuffed Peppers. A variation on my favorite stuffed peppers…
Tuesday: One pot dish meal: Sweet Potato and Chickpea Stew. This was massively snubbed by my husband, who tasted it while it was cooking and decided that it was not flavorful enough…that was honestly a harsh call. I thought it was pretty good…I especially liked the fact that it made great leftovers for a couple of my lunch meals.
Wednesday: Pasta night at the house. Back by popular demand…especially after the fiasco from the day before. Penne with Mushroom and Italian Sausage.
Thursday: We had some leftovers from our previous meals but I thought I would add one side. I made a Corn, Bacon and Red Pepper Saute. I left the spinach out as my daughter these days doesn’t like to see anything green in her plate.
Friday: I had planned to make Zucchini Fritters but a late after school trip to the library decided against it. So Pizza it is!
