Phew…This week went by so fast. I’ve had hardly any time to update the blog. But meals have still been prepared so here is how it went.
Saturday: My daughter came down with a cold so we spent a lot of time in the house. To beat cabin fever, I baked, which I usually do when I need to refresh or de-stress. A comforting Chocolate Cake seemed like a good idea. I had a lot of almond flour so I followed this recipe. It was deliciously moist thanks to the olive oil.
For lunch, I used leftover rotisserie chicken to make some Chicken Honey Mustard Pinwheels. I followed this recipe but found it too sweet so I would definitely cut on the honey if I ever make it again.
For dinner, I made a Quick Chicken Noodle Soup to help my little chickadee feel better.
Sunday: It was a Dough Day. I made homemade Playdough with my daughter and then I made a Pepperoni and my personal favorite a Prosciutto, Arugula Pizza.
Monday: Whenever I go to Whole Foods, I buy a French Brioche so my breakfasts looked like this for a couple of days.
For dinner, we had Baked Potatoes with Cottage Cheese and Chives.
Tuesday: It was a fun day as I went to meet Joelle Dumas from the Ecole Claire Fontaine in Venice Beach. More to come on this subject, I promise! When I came home, I made a quick but nutritious Brown Rice Bowl with Miso, Poached Egg and Kale-Radish Slaw.
Wednesday: Chicken Pot Pie and Spinach Salad. With my husband gone on a business trip and my daughter’s meal taken care of, it was a dinner for one.
Thursday: Mustard Maple Roasted Salmon, Garlicky Swiss Chard and Brown Rice
Friday: There are never enough dates with your husband but today, we made it happen. Sushi and a movie!
