This week was our last week using the service HelloFresh. I wasn’t sure exactly when I would end our subscription but let’s say that last week’s meals were the least inspiring for me and that made my decision easier. I’ll tell you more in detail what our was like so stay tuned!
Saturday: Salmon + Lentil bowl. I love the combination of salmon and lentils. If you would like to try it heres a classic recipe.
Sunday: My all time favorite pancakes for breakfast.
Freekeh Pilaf + Gjelina’s Roasted Yams + Roasted Chicken for dinner. I finally experienced cooking freekeh. There are not that many recipes using that grain out so I might have to come up with fresh ideas there but we are still madly in love with it.
Monday: Rice + lentil bowl with leftover salmon and sweet potatoes.
Tuesday: I haven’t been too much of a fan of HelloFresh salads in general, but this one was pretty good and satisfying, probably because of the roasted potatoes. Springtime Salad with Crisp Radish, Sugar Snap Peas and Fresh Mozzarella.
Wednesday: Japanese Chicken Meatballs + Steamed Jasmine Rice + Broccoli. These chicken meatballs were really amazing and were very easy to prepare. I served them with some Hoisin sauce.
Thursday: Smoky Black Bean Cakes with Avocado Salsa and Tangy Arugula Salad (via HelloFresh). I had a few technical issues trying to form the cakes as there wasn’t really any binding agent in the recipe. The flavor was OK and honestly, as long as there some avocados, we are good!
Friday: Kale & Lentil Soup. Served with some fresh and warm baguette, this was ultimate comfort food and perfect for the rain day that we had in California.
