Saturday: Tuna Salad Open sandwich with Heirloom tomatoes for a quick lunch.
Sunday: Spring Tortellini Gratin with Asparagus and Parmesan Breadcrumbs. Easy one-pot meal.
Monday: Frisée Salad with Lentils and Poached Egg for lunch.
Chipotle Seitan Chili for Dinner. I’m usually not a big fan of vegetarian protein, but this was delicious.
Tuesday: Grilled Vegetables and Hummus Wrap for lunch (recipe coming up)
Salmon & Sweet Potato Cake, Broccoli and Jamine Rice for Dinner.
Wednesday: Leftover Salmon Cakes
Thursday: Jamie Easy-Peasy Tomato Tagliatelle with Asparagus, Fresh Basil & Parmesan
Friday: Baked Potato, Cottage Cheese, Lemon-Roasted Asparagus
