Our experiment with the meal delivery service Hellofresh.com continues with a few hit and miss. This week, I have also adopted a new strategy to save time in the morning: overnight oats. They take a few minute to prepare and are really delicious. Also after seeing this recipe in the New York Times Magazine, I finally ordered this book. I can’t wait trying new recipes as I love Gjelina‘s take on wholesome, seasonal Californian cuisine.
Saturday: I made Cookie and Kate’s Citrus Olive Oil Cake. I had mixed results with this one, maybe because I substituted spelt flour for the whole wheat flour? It was too dense and a tad too sweet for my taste.
Sunday: I made the Squirl inspired Ricotta Brioche. I topped it with some Rose Diamond Nectarine jam.
Monday: I stopped by Superba Food + Bread to get one of their yummy loaves, which made lunch very easy. Avocado + Red Pepper Hummus + Tomato + Feta Tartine.
Ok, I was excited to try Jamie Oliver meal from HelloFresh.com: Jamie’s Aloo Gobhi with Fluffy Rice & Yogurt. I love curries in general but this one was a bit disappointing. All the Jamie Oliver meals we have had through HelloFresh.com have been our least favorite by far. Go figure. This is now our inside joke: “a Jamie Oliver meal, oh no…”
Tuesday: Our second HelloFresh.com meal was more up our alley: Crispy Noodle and Veggie Stir Fry. I loved all the veggies (mushrooms, red bell peppers and snow peas) and we got to discover a type of noodle we never had before: Chuka Soba noddles.
Wednesday: I am getting tired of always feeling rushed in the morning, so I adopted a new technique to save time on preparing breakfast. Meet the Chia Overnight Oats Pudding. I made two batches that got me covered for the whole week, one with almond milk and the other one with coconut yogurt. I love how versatile these are and the toppings options are endless (almond butter, banana, nuts, seeds etc…)
For dinner, I made my favorite Italian Sausage Pasta with Peppers and Mushrooms. One way to feel a bit less guilty to use jarred Marinara sauce is to dress it up a bit, which can be easily done with just a few veggies and a protein. The recipe is coming up so stay tuned.
Thursday: A favorite of ours: Roasted Cauliflower and Lentil Tacos with Creamy Chipotle Sauce. I served it with a Mango Salsa.
Friday: For our last HelloFresh.com meal, we had the Forbidden Rice Salad with Roasted Butternut Squash, Pistachios and Arugula.
