This was our second week using the service HelloFresh.com. We didn’t like our meals as much as our first week but I know, next week will be more up to our taste so that’s okay. I still appreciated the convenience of it. I want to commit to at least a month and see how it plays out with our monthly food budget.
Saturday: I made a Creamy Tomato Basil Soup with Grilled Cheese Bites. I wanted to switch things a bit and try a new tomato soup recipe. I think I still prefer this old-fashioned recipe. The Grilled Cheese Bites and technique (using a heavy bottom skillet in lieu of a panini press) were good though.
Sunday: Our second week of HelloFresh.com meals arrived on Saturday and we started with the Crispy Sunchoke and Quinoa Salad. I don’t think I have had sunchokes before. Not quite sure I like them to the point that I would buy them but still, always a good thing to try new things.
Monday: For lunch, I made a Big Salad (romaine & tomatoes & tuna & corn & olives). Yum!
We had the leftover soup for dinner.
Tuesday: Roasting is one of my favorite ways to eat vegetables. I made a Pan-Seared Salmon with Curcuma & Herbs Couscous and Roasted Asparagus and Zucchinis. Doesn’t it look like Spring in the plate?
Wednesday: For our second HelloFresh.com meal, we had Jamie’s Squash & Penne Bake with Ricotta & Golden Bread crumbs. Hum, I have to say I wasn’t too transported by this recipe. I am not a huge Butternut Squash fan and neither is my husband. This dish unfortunately didn’t work for us. I actually ended up making a quick Marinara sauce for my husband and daughter…That puts Jamie Oliver’s meals in the bottom three, two weeks in a row (sorry mate!). Considering that I subscribe to this service mainly because of his recipes, this comes a bit of a surprise, but let’s see how next week’s curry turns out!
Thursday: I made a Turkey Bolognese and followed this Giada De Laurentiis recipe.
Friday: For breakfast, I made my daughter a Chocolate Ricotta Toast. I actually didn’t toast any bread, but used some brioche that I had.
For dinner, we had the last of our HelloFresh.com mealS: Wild Mushroom and Thyme Risotto. My husband is not a huge risotto fan to say the least but we both found this one pretty good.
