This post is a bit shorter than usual. Last week was a busy one and between eating out and then eating the leftovers, there were a lot less home cooked meals. But here were the ones we enjoyed!
Last Tuesday was Chandeleur day (candle Festival) in France, equally known as Crepes day! Yay! I have a deep, deep love for crepes and I believe I have succeeded in passing my love to my daughter. Crepes were a meal by itself back in France and toppings were everything. Jam, sugar, nutella…you name it. My daughter loved her crepes filled with the chocolate hazelnut butter the best.
I also made a Burrito Bowl: seasoned black beans, cherry tomatoes, brown rice, roasted butternut squash, kale and a dash of tahini sauce to top it off.
This week was also our return to a more vegetarian diet and I made a big batch of Khichdi, a South Asian variation on the classic lentil and rice. A typical Ayurvedic inspired dish that has a lot of healing properties. I like to eat mine with a dollop of yogurt.
My only stray from our vegetarian diet was fish. I made Salmon that I served over Couscous with a side of sautéed Zucchinis, kale salad and avocado. The best way I have found for my daughter to enjoy it is to marinate it with a mixture of soy sauce and honey. Perfect every time!
On Saturday, we received our first box from HelloFresh.com! I will happily report on that experience next week.
