We came home from Mexico last Saturday and I have to admit, I was happy to find some food from Hello Fresh at my doorstep, which saved from having to think too much about dinners. After a week of pampering, it was a little hard to go back to our routine and having to cook meals again. Here’s what happened after leaving this paradise.
Saturday: We came home quite late. I snacked on these crackers (love!) with peanut butter and jelly and made a quick scrambled eggs for my daughter.
Sunday: After a busy day unpacking and cleaning, I made Jamie Oliver’s Oozy Zucchini Risotto with Mozzarella & Fresh Basil. Like it said, it was oozy, maybe a little too much for my taste…
Monday: Roasted Pepper Fajitas with Smoky Refried Beans and Citrus Sour Cream, from Hello Fresh. Apart from leaving the tortillas a little too long in the oven, this was good and it even provided some leftovers for the next day.
Tuesday: I added some beans to yesterday’s leftover that I served with some brown rice.
Wednesday: Our favorite Tomato Soup that we ate with some baguette and cheese.
Thursday: I made a bid batch of Granola, which I have been wanting to do for weeks.
For dinner, I made a oldie but goodie Roasted Cauliflower and Lentil Tacos with Chipotle Sauce and Mango Salsa.
Friday: Leftover Tacos
