This week I discovered a new meal delivery service that I’m excited to try: hellofresh.com. I am curious to see how it would play out with our weekly food budget, as it seems to me that we are still spending too much. Meanwhile, here is what I have been cooking this week.
Saturday: Ok, this is probably gonna have to stop as I’ve been going a little overboard during the holidays…Unfortunately, I don’t have the Parisian lifestyle/walk everywhere kind of thing to back these up….
Sunday: I made a quick but satisfying soup: Quick Tomato, White Bean and Kale Soup that I served with some Garlic Bread. They are different ways to do garlic bread, I simply like to toast the bread with some olive oil and then rub some garlic on the bread while it is still warm.
Monday: I made a quick Burrito-style Rice. One of those pantry dishes…
Tuesday: Turkey Burgers + Sweet Potato & Parsnip fries. I followed a Mark Bittman recipe for the turkey burgers: I sautéed a diced green pepper and onion and incorporated it to the turkey mixture which gave the burgers a nice moisture. I went for healthier fries using the sweet potatoes and parsnips that were somehow sitting in my fridge.
Wednesday: I had a lot stale sourdough bread so I made a Bread Pudding. I made it with Almond Milk and added Blackberries.
For dinner, I made a Baked Tilapia with Tomatoes & Potatoes + Vegan Creamed Spinach.
Thursday: Lunch out at Superba Food + Bread. I had the Kale Toast and of course came back home with one of their loafs.
Dinner was easy with leftover fish and Steamed Broccolis
Friday: I sort of recreated what I had at Superba the day before: Avocado Toast + Kale + Eggs for lunch.
For dinner, I made a Moroccan Chickpea Stew that I served over Quinoa. It was simple and fast, perfect for a weekday dinner.
