I am excited to launch a new series, called the lunchbox of the week!
There is so much to say about lunch boxes and there are already so many great resources out there, but I thought it would be fun to share with you, each week, what I have prepared for one of my daughter’s lunch box.
As I mentioned earlier, the culture of lunch box was very foreign to me. I have always served fully cooked meals for my daughter so I wasn’t quite sure how to turn them into a nutritious and portable version for school. I spent quite a lot of time on Pinterest and blogs, researching, bookmarking and pinning. Now I pretty much know what works (pasta!) and what doesn’t (sandwiches!) but I am always excited to get new lunch packing ideas. Hopefully, this new series will inspire you too!
My picks for this week’s lunchbox is:
Sweet Corn & Pasta, Roasted Vegetables and Rotisserie Chicken.
Anything with pasta is always a winner in my daughter’s book. I just added kernels from leftover corn on the cob with a little cheddar cheese and butter, as well as chicken and leftover roasted vegetables.
I always add a fruit to my daughter’s lunch box. Always.
