This is one of the lunchbox I prepared for my daughter this week.
Homemade Hummus, Pita bread, Cucumber and Carrot sticks & Grapes
It is always a challenge for me to incorporate protein into my daughter’s diet. She barely eats fish, although she loves Crab Cakes and just won’t eat meat at all. Sometimes, I try to sneak some sausage or chicken in her pasta sauce but when she sees it in her plate, she immediately asks me to take it out. Sigh.
One thing I have had luck with though is Hummus. She loves Hummus so once or twice a week, I make a batch using this recipe and use it for her lunchbox. I typically add crunchy vegetables and a few whole wheat Pita bread slices.
