It’s been a while. And in between, summer sneaked in.
All I have been wanting lately is summer food that rhymes with barbecue, salads, cocktails by the pool, not always the most kid friendly food. As I was browsing one of my favorite blogs for inspiration, I came across this pasta and fresh tomato sauce recipe with barely cooked ripe tomatoes. My husband and daughter love tomatoes but not necessarily in their almost raw form and that’s when I remembered the famous Marcella Hazan tomato sauce.
The first time I tried I wasn’t sold. Maybe because I used canned tomatoes, so this time as I had plenty of ripe tomatoes, I decided to give it another try and so here it is…
I will also grill some Italian sausages on the side for extra protein boost and voila!
My plans for the rest of the week include:
- Vegetarian burgers
- Thai pineapple fried rice
- Vegetarian arugula and black beans tacos with pickled radish and feta
