I buy berries all the time. This is something I always have in my fridge. I typically assemble a bowl of blueberries, raspberries and strawberries for every breakfast. My daughter loves to nibble on them and my husband always uses them in his morning oatmeal.
But the other day, the strawberries I bought were not as fresh as I though they would be so instead of throwing them out, I made a jam. Instead of using sugar to set the jam, I used chia seeds that magically turn liquid into jelly. These seeds are packed with Omega-3’s and are high in fiber, hence their absorbing quality.
I enjoyed this jam spread over toast with almond butter the most but it would work equally well mixed in oatmeal, acai bowls, yogurts or even cookies, like thumbprint cookies.
Heres what you need and how to do it. The beauty of it is that it only has 3 ingredients and can be done in less than 20 minutes, so get started!
1 pound chopped strawberries
1/4 cup agave, honey or maple syrup
2 tablespoons chia seed
Cook the strawberries until they break down and start becoming syrupy. You can smash them or leave them as they are depending on how thick or thin you like your jam.
Off the heat, add the sweetener of your choice. I used honey here. You can obviously add less depending on naturally sweet your fruit is.
Stir in the chia seeds and let stand until it starts to thicken.
Transfer to a jar and store in the refrigerator, once it has cooled to room temperature.
