A very easy yet tasty weeknight meal.
2 chicken breasts
1 can of coconut milk
1 tablespoon of curry powder
1 tomato, diced
1 carrot, diced
Salt, pepper to taste
Cut the chicken breasts in cubes.
Cook the chicken in a skillet until it gets lightly golden.
Add the coconut milk and the curry powder.
Then add the tomato and the carrot
Bring to a simmer and cook until the vegetables are tender and the chicken is cooked through.
Adjust the seasoning if needed and top with lots of cilantro
