Devrim shares a very nutritious and kid-friendly recipe all at once: Chicken Lentil Pasta Soup.
-1 cup green lentils (soaked overnight or cooked)
-1 tablespoon olive oil
-1 onion, diced
-1 chicken breast, cut into chunks
-2 tablespoons tomato paste
-6 cups water or chicken broth
-a pinch of turmeric
-salt & pepper
-3/4 cup pasta (like elbow macaroni)
In a large pot, heat the olive oil and cook the onion until slightly soft.
Add the chicken and let it cook a few minutes for flavor.
Add the tomato paste, water (or broth) and wait until the chicken is cooked all the way
Add the lentils, season with salt, pepper, turmeric and garlic
When the lentils are almost tender, add the pasta and let it simmer until the pasta is cooked.
(Note: you can substitute lentils with chickpeas)
