What to do when you have leftover brioche? I first thought of bread pudding but we were approaching snack time fast so I chose to turn my little brioches into French toasted churros or churrosed French toasts if you prefer.
For this recipe, I used 3 small round brioches. Feel free to adapt appropriately.
Topping of your choice
Cut your brioche slices into thick strips (like churros.)
In a bowl, mix 2 eggs, 1/3 cup milk, 1 tablespoon sugar, 1/4 teaspoon of cinnamon and a pinch of nutmeg and 1 teaspoon vanilla extract.
Layer your brioches strips in the egg mixture until they start to soften, 1 or 2 minutes.
In a non stick skillet, heat a little bit of butter.
Add your soaked brioche strips and cook until golden brown and slightly crisp.
I served these golden beauties with a chocolate dipping sauce (Justin’s chocolate hazelnut butter microwaved for 20 seconds) on the side and some strawberries but the choice is yours of course.
