This is a very easy weeknight dinner that the whole family will enjoy.
-4 chicken legs
-Pancetta or bacon, diced
-1 onion, diced
-5 to 6 tomatoes, diced
-Green and/or black olives
-Bordeaux wine (optional but recommended)
In a skillet, cook the chicken legs until well browned.
Add the pancetta and the onion.
Mix in the tomatoes and the mushrooms
Add the olives
Season with pepper but omit the salt
Let it simmer for 45 minutes
Serve with fresh tagliatelle and a good Bordeaux wine
